Meet Our Staff
Lindsay Vahling, D.V.M. is the owner of A & E Animal Hospital. Originally from Buffalo Grove, IL, she moved to the Champaign-Urbana area to attend the University of Illinois for both her Bachelor's and Veterinary degrees. While in school, she worked for A & E Animal Hospital as an assistant. After graduating in May 2014, she returned to the hospital as an associate veterinarian and purchased the hospital in 2017. Her areas of interest include radiology and surgery. Outside of work she enjoys spending time outdoors working with her husband Bruce on home projects, pampering her cat Pinot and their ducks, and traveling, especially to da U.P.!
Amy L. McGuffin, D.V.M. is an associate veterinarian, and has been in practice at the hospital since June 2006. Dr. McGuffin graduated from The University of Tennessee College of Veterinary Medicine in May 2006. Originally from Highland, Illinois, she moved to the Champaign-Urbana area after graduation to be closer to home, and to start practicing at A & E Animal Hospital. She is a member of the American Veterinary Medical Association, the Eastern Illinois Veterinary Medical Association and the Illinois State Medical Association. Much of her free time is spent enjoying time with her husband, young son and daughter, as well as their guinea pig Olaf and their two cats Savannah and Sweet Pea.
Nicole M. Long, D.V.M. is an associate veterinarian. Originally from Frankfort, Illinois. She obtained both her Bachelor’s and Veterinary degree from the University of Illinois. During her time in school she worked at A & E as a veterinary assistant and could not be more excited to re-join our team as a veterinarian! She values the human-animal bond and believes client education is a vital component to veterinary medicine. She has a special interest in ophthalmology. Outside of work she loves to travel, run half and full marathons and go hiking with her two Labradors Harley and Jax.
Sara Coffey is the Office Manager for A & E. She came to us in March of 2020 with 14 years of experience in the veterinary field. She resides in Saint Joseph with her husband and son. She is active in the local community theater scene and a part of several fitness groups. In her spare time she enjoys working out, cooking/baking, performing, traveling and spending time with her family and friends and especially their two dogs Reba and Taco.
Angela Cross, C.V.T. is a Certified Veterinary Technician. Angela began working at A & E in 2019. She graduated from Parkland College's Veterinary Technician program in 2008. Outside of work she enjoys spending time with her husband, two kids, and her at home "zoo".
Stephani Spry is a Veterinary Assistant. She is from Atwood, IL. She has been at A & E Animal Hospital for a little over a year. She is in the Parkland Vet Tech Program, graduating in May 2020, and will be taking her VTNE to get certified in August 2020. When she has free time she likes to read, cook, and do puzzles. She is obsessed with black cats. Her cats are named Kiddy and Duki. Stephanie loves animals and has a passion for this field.
Laurel Rucker is a Receptionist. Laurel began working at A & E in 2018. She grew up in California as an only child with a veterinarian for a mom so she has always had a love for animals and a need to be around them. When she is not at work she is at home with her 3 kids. They enjoy playing outside, cooking and visiting family and friends.
Adriana Del Pino is a Veterinary Assistant. She has been with the clinic since August of 2019. She is an undergrad senior at U of I getting her bachelors in animal science, and she plans to apply to U of I vet school for exotic animal vet. She has 2 dogs, Blacky and Arthas, and she has a few reptiles as well as hermit crabs. In her spare time, Adriana loves playing video games and taking care of her plants. She hopes to one day work with exotics all around the world
Emily Michael is a Veterinary Assistant. Emily began working for A & E in 2019. She is currently a veterinary student at the U of I College of Veterinary medicine, Class of 2022. When she's not working or studying, Emily loves to climb trees, write music, and spend time with her two cats- Sandy and Nala.
Brianna Huff is a Veterinary Assistant. Brianna began working at A & E in 2019. She is currently studying Animal Science at the University of Illinois, and hopes to attend veterinary school following the completion of her Bachelor’s Degree. Outside of work, she enjoys traveling, working with service dogs in training, assisting with wildlife rehabilitation, and spending time with her family, friends and beloved pets her chinchilla Angel, her bird Gado, and her dog Champ.
Khaylan Foy is a Veterinary Assistant. He is a new addition to the staff here at A & E in 2020. He is a recent graduate of Jackson State University, where he obtained his biology degree with a concentration in Veterinary Medicine in May of 2019. Ultimately, he wants to become a Veterinarian, and is currently applying to enter Vet school for the fall of 2021 semester. Outside of work he enjoys traveling, and spending time with his friends and family.
Abigayle Plutz is a Veterinary Assistant. She started with
A & E after moving here in January 2020 from the suburbs of Chicago. She is attending Parkland college to get her Associates degree in Elementary Education. She hopes to transfer to Illinois State University to get her Bachelors and become a teacher. In her free time Abi enjoys hiking and kayaking with her dog Ryder.
David Kim is a Veterinary Assistant. He recently graduated from U of I and has planned on working in the field for a year or two to better get an understanding/experience of the type of work and environment he want to be in before going to veterinary school as his experience in undergrad was more limited. Outside of work he enjoy keeping active through weights and sports, playing games, spending time with friends, or just being lazy at home with Jawa
Evelyn Martinez is a Kennal Attendent. She is from Chicago, Illinois and started at A & E at the beginning of 2020. Evelyn is studying Animal Sciences with a Pre-Veterinary and Medical concentration at UIUC. Her goal is continuing her studies at UIUC by attending their Veterinary School and becoming a Doctor of veterianry Medicine. In her free time she loves spending time with family and her two dogs, Cookie and Snowball. She loves playing sports, going to the gym, and traveling around the world.
Jeff Delmore is a Floater staff member. He is a junior currently studying Animal Sciences at U of I with intentions of being a veterinarian. He is thinking of adopting but am not yet sure if he is a dog or a cat person! In his spare time he loves playing soccer, video games, and spending time with family.
